Bile salt hydrolase and cholesterol assimilation potential of lactobacilli fromNigerian fermented foods and human sources

Bile salt hydrolases (BSH) results in microbes releasing enzymes conferring physiological functions for both the producing organisms and host subsequently lower serum cholesterol. In recent years, these attributes have generated interest towards screening of lactic acid bacteria (LAB) functional food production. this present study, lactobacilli (n=34) (13 L. casei, 6 paracasei, 11 brevis, 3 pentosus 1 plantarum) from varied sources viz. Nigerian fermented foods human specimens were screened qualitatively quantitatively BSH activity using direct plate assay cell free extracts (CFE) overnight cultures. To establish a correlation between cholesterol reduction, 12 isolates displaying high precipitation over bile agar plates, enzyme CFE selected vitro reduction assay. Results showed that 58% humans, 36% origin larger zones precipitation. The highest was exhibited by Lactobacillus casei GR4 (76mM) after 10 min incubation, an isolate food. Isolates expressed higher compared to those with significant increase (P<0.05) 30 incubation. Cholesterol level variable as 8ST5 8ST7 had 2 4% levels medium; while paracasei group (Lactobacillus group, LCG) 3MB4, 8BM6, BK4 brevis GR29 7%/ml each proving their application formulation, hypercholesterolemia, prophylaxis controlling levels.

Isolation of tannin-degrading lactobacilli from humans and fermented foods.

Lactobacilli with tannase activity were isolated from human feces and fermented foods. A PCR-based taxonomic assay revealed that the isolates belong to Lactobacillus plantarum, L. paraplantarum, and L. pentosus. Additional studies on a range of Lactobacillus species from established culture collections confirmed that this enzymatic activity is a phenotypic property common to these three species.
